INGREDIENTS
5 TSFF tomatoes, preferably heirloom, coarsely chopped 1 medium TSFF Candy Onion, coarsely chopped Lots of TSFF garlic, pressed or chopped finely 3 Tbs. Olive oil 2 Tbs. Parsley, finely chopped 2 tsp. whole Oregano 1 Cup of dry white wine or vermouth 8 oz TSFF Marinara Sauce 1/4 tsp cinnamon A pinch of fresh Allspice, (I grate a whole one on a fine microplane grater, which I purchased enthusiastically but seldom use, except for this, nutmeg and citrus zest.) Salt and freshly ground black pepper
INSTRUCTIONS
Sautee the onions in the oil until a bit browned; add the garlic in the center with a bit more oil and keep moving until sticky and browned. Add the tomatoes, parsley and oregano; simmer covered until the tomatoes are very tender, approximately 25 minutes. Add the remaining ingredients and cook an additional 25 minutes. The unusual spices are what makes this a unique sauce. It's great over pasta, and really shines with the addition of one of the great sausages to be found at local farmers' markets.
