LAZY CUCUMBER AND ONION PICKLES
INGREDIENTSÂ
1 Pound of Manar CucumbersÂ
1 Onion, may be sweet, or notÂ
Sea salt and freshly ground white pepper (I found whole white peppercorns at Balducci's.)Â
1 Tbs. sugarÂ
1 Cup rice wine vinegarÂ
1 tsp. yellow mustard seedsÂ
1/2 tsp. celery seedsÂ
1/4 tsp. ground turmeric
These should be fresh for a couple of weeks
INSTRUCTIONSÂ
Slice the cucumbers thinly crosswise*.Â
Slice the onions into thin rounds.Â
Put 1/2 tsp. salt, a few grinds of white pepper and the sugar into a bowl large enough for the veggies. Â
Add the vinegar and 1 cup water and stir until the sugar and salt are dissolved.Â
Add the cucumbers, onion, mustard seeds, celery seeds and turmeric.Â
Press on the vegetables to immerse them in the liquid.Â
Cover and refrigerate a few hours.Â
*A mandoline works great for this, and for the onion.
