Garlic Scape Pesto
Ingredients 1/2 lb. TSFF Garlic Scapes, chopped into 1" pieces 1 Cup of good olive oil 2 Cups grated Parmesan Cheese
(I prefer true Parmigiano Reggiano)
In a food processor or sturdy blender* combine the scapes and oil and process until fairly smooth. Pour into a bowl and stir in the grated parmesan.
It may be frozen for later use, perhaps in an ice cube tray as many do with Basil Pesto. It is good over pasta.
*I've never tried it but perhaps even an immersion blender (or "boat motor" as Jeremiah refers to it) may do the job.
I usually simply scoop it up with a cracker, but there are lots of ways to use Scape Pesto, as with the Basil version.
