Ingredients
1 TSFF sweet potato, chopped
1 medium TSFF Candy onion, chopped
A couple of TSFF shallots peeled and chopped coarsely
2 fully cooked chicken sausages with apple, chopped (or any breakfast sausage)
1 sweet apple (such as Cameo, Fuji, Honeycrisp, Crimson Crisp or Golden Delicious), chopped
2 eggs
Instructions
Roast the potato and/or sweet potato, shallots and onion at 400F for 30-40 minutes or until nicely browned and cooked through.
Fry the sausages in a large skillet.
Add roasted potato and onion.
Fry the eggs in a corner of the skillet.
Mix all together or serve eggs on top.
