Apple and Sweet Potato Skillet Dish

  • 1 TSFF sweet potato, chopped

  • 1 medium TSFF Candy onion, chopped

  • A couple of TSFF shallots peeled and chopped coarsely

  • 2 fully cooked chicken sausages with apple, chopped (or any breakfast sausage)

  • 1 sweet apple (such as Cameo, Fuji, Honeycrisp, Crimson Crisp or Golden Delicious), chopped

  • 2 eggs


  1. Roast the potato and/or sweet potato, shallots and onion at 400F for 30-40 minutes or until nicely browned and cooked through.

  2. Fry the sausages in a large skillet.

  3. Add roasted potato and onion.

  4. Fry the eggs in a corner of the skillet.

  5. Mix all together or serve eggs on top.
