The Barefoot Contessa's Sautéed (Fairy) Cabbage
  • 1½ lbs. TSFF Fairy Cabbage, about 4 medium ones
  • 2 Tbs. unsalted butter
  • ¾ tsp. kosher salt
  • ¼ tsp. freshly ground black pepper
  1. Cut the Fairy Cabbage in half, pole to pole, and then into quarters, trim out as much of the tough core as possible. then slice and chop it fairly thinly, into bite sized pieces.
  2. Melt the butter in a large sauté pan or heavy-bottomed pot over medium-high heat. Add the cabbage, salt, and pepper and saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown.
  3. Season, to taste, and serve warm.
