Raspberry Elderflower Sorbet

Raspberry Elderflower Sorbet
  • 4 cups TSFF raspberries (or blueberries or blackberries)
  • ½ cup boiling water
  • 1¼ cups St. Germain elderflower liqueur (or 1 cup simple syrup* combined with ¼ cup St. Germain)
  • Pinch of salt
* Made from equal parts sugar and water, boiled for 5 minutes, and cooled.
  1. Puree berries and water in a high-powered blender like a Vitamix. If you're using a regular blender, you may wish to strain the seeds from the puree.
  2. Combine the puree with the St. Germain and freeze in an ice cream freezer according to manufacturer's instructions. OR Pour the berry/liqueur mixture into a 10" X 5" X 3" loaf pan and freeze for 3-4 hours.
  3. In batches, cut the ice into pieces and place in a food processor until smooth. Return to the freezer.
